A little about me
Hi, I’m Khristina, your average Gen X woman navigating the chaos of midlife with a spatula in one hand and a suitcase in the other.
I grew up in a tough environment, where survival was the priority and softness wasn’t always an option. Like many of us, I stumbled through my late teens and early 20s, trying to find my place in the world. Eventually, I found solid ground in the restaurant industry.
Over the next 35 years—through sweat, grit, and a whole lot of garlic,I built a life as a chef and restaurant owner, most proudly with my from-scratch Pan-Latin kitchen, Sol Food, in Everett, Washington.
But in recent years, something shifted. I left the service industry and started experimenting—trying on new roles, exploring new passions, and asking myself: What now?
While I don’t have all the answers yet, I’ve got a plan: I’m selling (almost) everything I own and road-tripping around the U.S. with my dog Stevie, documenting it all as I go.
Along the way, I’ll be sharing the real food I cook and eat daily—meals that are healthy, hormone-supportive, and frugal, crafted with decades of culinary experience and zero tolerance for diet fads or overpriced nonsense.
GenXtina is about figuring it out together. This isn’t some Pinterest-perfect version of midlife, it’s real, it’s raw, and sometimes it’s reheated leftovers. But it’s mine. And maybe it’ll help you find a piece of yours.
